Grub List

  • Cocktail hour eats: Cowboy Caviar: Black bean & pea dip, Pancho's Salsa, with fresh Corn tortillas. So you don't get too red-eyed, we've got this at your table during our happiest hour.

  • The starter: Rocky Mountain oysters (aka "Mesa Maracas"), lightly breaded and fried, sliced quick and neat. "Cuz' out here, we eat all of the steer"

  • Belly warmer: Cajun Chicken Gumbo Stew & cornbread. Gamblin' Jacque's recipe from the Big Easy

  • Albuquerque "crab cakes": We ain't got the crabs, but we got the snakes. Real rattlesnake, rolled into in East coast recipe. You wouldn't know it if we didn't tell ya!

  • Cowboy Cole Slaw: None of them fancy Boston "salads" for us. We're talking Apple slaw, with a wine vinaigrette salad dressing.

  • Dinner! Cookie already has your order in, so you're getting either:

  • The gaucho Red Eye steak, grilled over an open Mesquite fire

  • BBQ Chicken Breast, marinated in white wine, and grilled.

  • Sides: Bourbon Glazed Carrots

  • Prairie Potatoes: Spicy wedges with sour cream, chili, bacon, & onions, glazed with cheese

  • Dessert: Apple Dumplings in a cinnamon sauce
